Cut the meat into cubes and put in the marinade. Add salt, pepper, pepper paste, 3 cloves of chopped garlic, a little tabasco sauce and pour the white wine. Refrigerate for a few hours before cooking.

Peel the potatoes and cut them into large cubes.

Finely chop the pickles. It must contain cucumbers, donuts and cauliflower, possibly chives.

Put the lard in a pan and add the meat (without marinade). Let it fry well on all sides for about 5-7 minutes. When the liquid decreases and the pieces of meat turn brown, pour the marinade over the meat and let it fry until all the juice decreases.

Meanwhile, fry the potatoes and when they are golden, take them out in a bowl. It is good to end the meat at once. So add the french fries over the meat in the pan, then add the chopped pickles, and mix lightly, being careful not to crush the potatoes. We taste pepper and spicy. Add olives and turn off the heat. Sprinkle generously with coriander. It is very important to use green coriander because it gives it an extraordinary aroma.

Don't forget the red wine next to it :)
