Knead a little more to even out, cover the dough with a clean napkin and leaven the dish in a warm place, away from drafts.

While the dough is fermenting, prepare the ingredients for the filling.

Peel a squash, grate it and slice it finely.

Wash the peppers, clean the stalks and seeds, then cut the julienne.

Peel an onion, wash and slice.

When the dough has risen, turn it over on the plate on which the flour has been sprinkled and knead a little more, in order to release the bubbles formed.

Spread a 1 cm thick sheet and place in a tray greased with oil beforehand.

Grease the sheet with 2-3 tablespoons of tomato juice and add the mushrooms, peppers and onions.

Grate the cheese, sprinkle with oregano and add the sliced ​​olives.

Pour another 2-3 tablespoons of tomato juice on top and put the pizza in the preheated oven at medium temperature.

INGREDIENTS

• 3 tablespoons olive oil

METHOD OF PREPARATION
First the dough is made. Mix the flour and salt with the oil and sugar. Dilute the dry yeast with a little warm water and place it over the flour.

Knead everything well until you get a homogeneous dough, then sprinkle a little flour on top of the pizza dough and leave it to rise in a bowl covered with a clean kitchen towel.

When it has risen enough, roll out the dough with a rolling pin and cut as desired.

The sauce is extremely important for the success of the final taste. So it is preferable not to put ketchup or broth on fasting pizza. Make a quick and tasty sauce, according to the recipe here: marinara sauce.

For the filling you can use absolutely any vegetable you like and have around the house, not just the ones listed above. Without fear, it can't help but be tasty!

To bind better, grate the fasting cheese on top or add cubes of tofu cheese. Bake for about 30-40 minutes, until the edges of the top are browned.
